Apricot-Stuffed Barbecued Chicken - 4 servings

  • 2 chicken breasts, with skin, flattened with mallet
  • 1/2 cup seasoned stuffing mix
  • 1/4 cup onions, chopped
  • 2 Tbsp unsalted butter, melted
  • 1/2 tsp ground ginger
  • 4 fresh ripe apricots, halved
  • 1/2 cup apricot jam
  • 1 Tbsp cider vinegar

Place chicken breasts skin-side down. Combine stuffing mix, onion, butter, and half the ginger. Spoon stuffing mixture in a strip along center of each breast. Top with apricot halves. Wrap chicken around the filling, tying each chicken with a string every 2 in.. Barbecue on a rack about 5.5 in. above medium-hot coals for about 15 minutes, turning once or twice. Mix apricot jam, vinegar, and remaining ginger. Brush over chicken. Cook an additional 5-10 minutes, or until done.
