Sunshine Salad - 4 servings

  • 5-1/3 cups spinach leaves
  • 1/2 red onion, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 2 oranges, peeled and chopped into bite size pieces
  • 1/3 cup fat-free vinaigrette dressing

Toss all ingredients together in a large bowl. Add dressing and toss again. Serve immediately.
