Chili-Roni - 4 servings

  • 1 lb ground beef
  • 1 package chili seasoning mix
  • 1/2 cup onion, chopped
  • 1/2 cup red or green bell pepper, chopped, optional
  • 1 can tomatoes, chopped
  • 3/4 cup water
  • 2 cups cooked elbow macaroni, drained
  • 1/2 cup cheddar cheese, shredded

Sauté ground beef in a heavy nonstick skillet over medium-high heat until browned. Drain excess fat from skillet and stir in next 5 ingredients. Bring to a boil. Reduce heat to low and simmer 15 minutes. Add cooked macaroni and simmer another 5 minutes. Sprinkle with cheese before serving.
