Alaska Pollock Burrito - 10 servings

- 2 Tbsp Mexican seasoning
- 10 pollock fillets
- 5 cups cooked black beans
- 5 cups shredded lettuce
- 5 cups pepper jack cheese, shredded
- 1-1/2 cups chopped fresh cilantro
- 10 large flour tortillas (10 inch diameter)
- 1-1/4 cups chipotle salsa (or chipotle-seasoned sour cream)
Sprinkle Mexican seasoning over fillets. Cook over medium heat just until opaque throughout; flake.
Assemble burritos with 1/2 cup each black beans, lettuce and cheese, and 2 Tbsp cilantro. Top with fish. Roll up tortillas, burrito-style.
Serve with chipotle salsa or chipotle-seasoned sour cream.
