Spicy Texas Drumsticks - 2 servings

  • 4 chicken legs
  • 3 Tbsp chili powder
  • 2 tsp cumin seed
  • 1 cup chili sauce
  • 1/4 cup dark molasses
  • 3 Tbsp cider vinegar
  • 2 Tbsp orange juice
  • 2 tsp orange peel, grated

Prepare grill (medium high heat). Sprinkle drumsticks with salt and a generous amount of pepper. Grill 12 minutes, turning occasionally. Meanwhile, stir next 2 ingredients in a small heavy saucepan about 1 minute over medium heat until toasted and fragrant. Mix in remaining ingredients. Reduce heat to medium low and simmer about 6 minutes, until sauce thickens slightly. Reserve half of sauce in a bowl. Brush remaining sauce on chicken. Continue to grill about 15 minutes longer until cooked through, crisp and brown, turning occasionally. Serve with reserved sauce.
