Stir-Fried Snow Peas - 4 servings

Preparation: 10 min. Cooking: 5 min. Total: 15 min.
  • 1 Tbsp soy sauce
  • 2 tsp rice vinegar
  • 1 tsp Asian sesame oil
  • 1 Tbsp water
  • 1/4 tsp sugar
  • 2 Tbsp vegetable oil
  • 1 scallion, cut into .5 in. pieces
  • 1 lb snow peas, strings removed
  • 6 oz mushrooms, quartered
  • 8 cans water chestnuts, drained and quartered

Combine first 5 ingredients and salt to taste in a jar with a tight-fitting lid. Shake vigorously and set aside. Heat oil in a wok or heavy nonstick skillet over high heat. Stir-fry scallions about 10 seconds. Add remaining ingredients and stir-fry 1-2 minutes. Stir in soy sauce mixture and cook 1-2 minutes or until snow peas are tender.
