Mushroom Tangerine Saute - 4 servings

  • 1/3 cup chicken stock
  • 1 cup onion, sliced
  • 2 cloves garlic, crushed
  • 2 tangerines, peeled and segmented, 1 tsp peel grated
  • 2 cups dried mushrooms
  • 2 cups mushrooms
  • 1 tsp dried basil

Heat 3 Tbsp stock in a heavy nonstick skillet over medium-high heat. Sauté onions, garlic, and tangerine peel 3 minutes. Stir in dried mushrooms and additional stock as necessary. Cook 2 minutes. Add fresh mushrooms, more stock if needed, and basil. Season with salt and pepper to taste. Cook 2 minutes. Stir in tangerine segments and cook 1 minute more. Drain.
