Pear Bread - 16 servings

  • 3 cups all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tsp salt
  • 1 Tbsp ground cinnamon
  • 1 cup pecans, finely chopped
  • 3/4 cup vegetable oil
  • 3 eggs, lightly beaten
  • 2 cups sugar
  • 2 cups pears, peeled and grated
  • 2 tsp vanilla extract

Preheat oven to 325°F. Combine first 6 ingredients in a large bowl. Combine remaining 5 ingredients in a separate bowl and stir into dry ingredients, until just moistened. Spoon mixture into 2 buttered 8.5x4.5 in. loaf pans. Bake 1-1/4 hours or until a tester inserted in center comes out clean. Cool 10 minutes before removing from pans.
