Grilled Chicken Kabobs - 4 servings

  • 1/4 cup water
  • 2 Tbsp soy sauce
  • 2 Tbsp lemon juice
  • 1 Tbsp honey
  • 1/4 tsp garlic powder
  • 1/4 tsp ground ginger
  • 4 boneless, skinless chicken breast halves, cut into 1.5 in. pieces
  • skewer
  • 1 green bell pepper, seeded and cut into 1.5 in. pieces
  • 1 onion, quartered
  • 8 large cherry tomatoes

Combine first 6 ingredients in a glass baking dish. Add chicken and turn to coat. Cover and marinate at least 2 hours in refrigerator. Prepare grill. Remove chicken from marinade and boil marinade 10 minutes in a saucepan. Alternate chicken and vegetables on skewers. Grill 6 in. from medium-hot coals 15-20 minutes, or until done, turning and basting often with marinade.
