Baked Red Snapper with Bagel - 4 servings

Preparation: 5 min. Cooking: 10 min. Total: 15 min.
  • 1-1/2 lbs red snapper fillets, or other firm-fleshed fish fillets
  • 2 Tbsp lemon juice
  • 1/4 tsp salt to taste (optional)
  • 2 Tbsp parsley, chopped
  • 4 whole wheat bagels, halved and toasted

Preheat oven to 375°F. Place snapper fillets skin side down in a lightly oiled baking dish. Drizzle fish with lemon juice. Season with salt and pepper to taste. Bake 10-12 minutes or until fish flakes easily. Sprinkle with parsley before serving. Serve with bagels.
