Zucchini with Walnuts - 4 servings

  • 1-1/4 lbs zucchini, shredded
  • 1/8 tsp salt
  • 2 tsp unsalted butter
  • 1 clove garlic, crushed
  • 2 Tbsp chopped walnuts

Place shredded zucchini in a colander. Sprinkle with salt and let stand 25 minutes. Rinse zucchini and press to remove excess liquid. Melt butter in a heavy nonstick skillet over medium heat. Sauté garlic 2 minutes. Add zucchini and walnuts. Sauté 5-6 minutes, or until zucchini is tender. Season with pepper to taste.
