Chicken and Black Bean Saute - 2 servings

  • 1 tsp unsalted butter
  • 1/3 cup onions, minced
  • 1/2 lb boneless, skinless chicken breast halves, cut into 1 in. pieces
  • 1 can (15 oz) black beans, drained
  • 1/2 tsp turmeric
  • 1/8 tsp cayenne
  • 1/8 tsp pepper
  • 2 scallions, sliced
  • 1 cup plain lowfat yogurt
  • 2 white pitas, opened at one side and lightly toasted

Melt butter in a heavy nonstick skillet over medium high heat. Sauté onion 5-7 minutes or until golden. Add chicken and sauté 3-4 minutes or until chicken is lightly browned. Stir in black beans, turmeric, cayenne and pepper and sauté 3-4 minutes. Reduce heat to medium low. Stir in half the scallions. Sauté 2-3 minutes, stirring constantly until scallions are softened.

Remove from heat and stuff into pita breads. Sprinkle with remaining scallions and a dollop of yogurt.
