Cod with Orange Sauce - 4 servings

  • 4 cod fillets, about 4 oz each
  • 1/2 cup orange juice
  • 1/2 tsp thyme, or 1 tsp fresh, chopped
  • 1/2 tsp orange zest
  • 1/8 tsp salt (optional)

Preheat oven to 375°F. Arrange cod fillets in a shallow baking dish. Pour orange juice over cod and sprinkle with thyme, orange zest, and salt and pepper to taste. Bake 12-15 minutes, or until fish is opaque throughout. Spoon orange sauce over fish and serve.
