Steaks with Lemon Parsley Butter - 4 servings

- 1-1/3 Tbsp unsalted butter, softened
- 2 tsp lemon juice
- 1-1/2 Tbsp parsley, minced
- 1-1/2 Tbsp shallots, minced
- 4 strip steaks, about 4 oz each
Place butter in a mixing bowl and beat until fluffy. Slowly beat in half the lemon juice. Stir in parsley and shallot. Chill parsley butter until ready to serve.
Turn on broiler. Arrange steaks on a broiler pan sprayed with vegetable spray. Season with salt and pepper to taste. Broil 4 minutes per side for medium done meat.
Drizzle with remaining lemon juice. Serve steaks with lemon parsley butter.
