Lemon Broiled Scallops - 4 servings

  • 1-1/2 lbs fresh sea scallops, trimmed and rinsed
  • 3 Tbsp lemon juice
  • 1-1/2 Tbsp olive oil
  • 1-1/2 Tbsp water
  • 1 Tbsp parsley, minced
  • 1-1/2 tsp lemon zest
  • 3/4 tsp pepper
  • 2 cloves garlic, crushed
  • 1/4 cup seafood cocktail sauce

Arrange scallops in a single layer in a shallow baking dish. Combine remaining ingredients, except cocktail sauce, in a jar with a tight-fitting lid. Shake vigorously and pour over scallops. Cover and marinate 15 minutes in refrigerator. Turn on broiler. Broil scallops 6 in. from heat source 5-6 minutes. Turn scallops and broil another 4-5 minutes until scallops are just cooked throughout. Serve with cocktail sauce.
