Impossible Broccoli Pie - 8 servings

1-1/4 lbs frozen chopped broccoli, rinsed under running cold water to thaw, drained thoroughly

3 cups cheddar cheese, shredded

2/3 cup onion, chopped

1-1/3 cups milk

3 eggs

3/4 cup buttermilk baking mix

3/4 tsp salt

1/4 tsp pepper
Preheat oven to 400°F. Combine broccoli, 2 cup cheese and onion in a bowl. Place in a greased 10 in. pie plate. Beat next 5 ingredients together until smooth, 15 seconds in a blender on high or 1 minute with a hand beater. Pour into plate. Bake 25-35 minutes, or until a knife inserted in center comes out clean. Top with remaining cheese. Bake 1-2 minutes more, just until cheese is melted. Cool 5 minutes.
