Garlic Green Beans with Jalapeno - 4 servings

  • 1 lb green beans, thawed if frozen
  • 2 tsp unsalted butter
  • 2 Tbsp olive oil
  • 2 cloves garlic, crushed
  • 1 jalapeno pepper, seeded and minced
  • 1/2 tsp salt (optional)

Place green beans in steamer basket over boiling water. Cover saucepan and steam 10-12 minutes or until bright green and tender. While beans are steaming, melt butter in oil in a heavy skillet over medium low heat. Cook garlic 2 minutes, stirring frequently until golden. Do not brown. Stir in jalapeño pepper. Remove from heat. Transfer green beans to skillet with garlic butter. Heat over medium low heat. Season with salt and pepper to taste. Toss until beans are coated.
