Apricot Couscous - 4 servings

12 dried apricots, cut into thin strips

1/4 tsp salt

1 cup couscous

2 cups light cream
Combine first 4 ingredients in a heavy saucepan and bring to a boil. Stir in couscous. Cover pan, remove from heat and set aside 5-7 minutes or until all liquid is absorbed. Serve with light cream.
