Bean and Rice Burritos - 6 servings

  • 1 medium onion, chopped
  • 1 lb canned refried beans, or other canned beans
  • 1/3 cup salsa
  • 1/4 cup cheddar cheese, shredded
  • 1-1/2 cups cooked rice
  • 6 8 inch flour or corn tortillas

Spray saucepan with cooking spray and heat for about a minute. Add onion and cook until tender. Add beans, salsa, cheese, and rice. Heat thoroughly. Warm tortillas. Spoon equal parts of the bean mixture down center of each tortilla. Fold tortilla around filling.
