Grilled Skirt Steak with Parsley Jalapeno Sauce - 2 servings

  • 2 Tbsp parsley, minced
  • 1 clove garlic, minced and mashed to a paste with salt to taste
  • 2 small pickled jalapeno chilies, seeded and minced (wear rubber gloves)
  • 2 Tbsp olive oil
  • 2 skirt steaks, about 1/4 lbeach, halved crosswise

Prepare barbecue. Combine first 4 ingredients and salt and pepper to taste in a bowl. Mix well. Season steak with salt and pepper to taste. Grill about 6 in. from hot coals 3-4 minutes per side, or until desired doneness. Transfer to a cutting board and let stand 5 minutes. Cut into thin slices across the grain. Serve with sauce.
